How to make Korean food at home on a budget.

Annyeonghaseyo korean food lovers!! 

So, I'm a huge fan of Korean Dramas! Who doesn't enjoy the fact that every episode make you hungry? They are always eating and every bite looks so delicious. Especially, when they grab a pair of chopsticks and dive right in. 

Two of my favorite recipes that I see all the time on K-dramas are Pork Kimchi Jjigae (Kimchi Stew) and Kimchi Fried Rice. It's probably the most common way of consuming some aged Kimchi. I love making Kimchi Jjigae with some fatty pork meat (PS: You can also make tuna jjigae and beef jjigae) in my humble opinion the fatty pork goes best with this soup. Korean restaurants are expensive,I pretty much spend about 3,000 PHP ( $70.00) for 2-3 dishes only.   then I figured, Why not make my own? So, I bought Kimchi at Soban Restaurant in Dumaguete City PH for as low as 300 PHP/1KL $7.00/KL it lasts about a week.You can also buy it in almost every Asian Food Market. Just so you know, this is my nixy-version kind of recipe. The taste are pretty much the same. So yeah, without further ado let's get started!!!

What you'll need:

•1/4 Cup of aged kimchi (Cut into bite sizes or whatever size you prefer)

•1/4k.g of pork belly 

•4 sprinkles of ground black pepper

•2 sprinkles of salt (depends how salty you want it to get)

•1 stalk small chopped onion (red or white)

•2-4 pcs of scallions chopped

•  1 tbsp chili flakes

• 140g of tofu  sliced into 1cm

• Kimchi Sauce from the Kimchi you bought or you can buy Kimchi Paste

• 1 cup of water 

• And a pot 

Let's start cooking!!

1• Stir fry the pork belly on low heat. (No oil needed since the pork belly has it's oil already) Sprinkle the salt and ground black pepper together.. When it's golden brown, add the chopped onions and stir for about 30sec. Then add the aged kimchi, 1 cup of water and kimchi paste/sauce together. Simmer it for about 15mins

2• When the pork is soft enough for you, add the sliced tofu, scallions and chili flakes ( You can add more chili flakes until you get the spice that you wanted) Simmer it for another 5mins and you're done..

Tips and Tricks you can add ramyun on it.

Serve with sticky rice and you're good to go. This soup is actually good for hangover. 😅 Based on experience haha! I can eat 5 bowls of sticky rice with just the pork jjigae. Yep, I am a fat kid inside.. 🐷 

So, the next one is Kimchi Fried Rice my husband's all time fave

What you'll need:

• 1/2 cup finely chopped kimchi 

• 1 cup rice of your choice (sticky or not)

• finely chopped onion (red or white)

• 1 pc of finely chopped scallions

• 3 cloves of  minced garlic

• cooking oil

• a COOKED meat of your choice ( I prefer chicken, the estimation depends on how many people are eating or how much meat you wanted on your fried rice)

• 1 tbsp soy sauce

• kimchi sauce/paste

Let's start cooking!!

Well, for this recipe as what i've said above we will be using a cooked meat of your choice. So since I used chicken in this recipe, i marinated the chicken overnight with soysauce, ground pepper and a little bit of sugar (just like how you marinate your chicken Adobo). You can marinate your meat for at least 30mins-1HR but the longer the better. After frying it, cut it into thin slices and let it sit until it's ready .

1• Heat the oil to 185c

2• Add the garlic and stir until its lightly brown (make sure it's not burnt! because when it is, any dish you'll make will have a taste of bitterness on it)

3• Add the onion - stir for about 20sec 

4• Add the kimchi - stir for 2mins until it's soft

5• When it's soft, pour the kimchi paste/sauce (this one depends on how saucey you want your fried rice will be))

6• Add your rice; stir for about 3-4mins ( I like my rice cripsy-ish) Don't forget to add 1tsb of soy sauce

7•  add the chicken

8• Sprinkle the scallions

9• And stir for another minute 

Voila!! You're done!! And You're Welcome!!  ✌🏻
